Vegetable Broth

Veg broth is the most underrated flavor enhancer. It’s also a great way to get rid of vegetables and herbs that are starting to go bad. I put everything in my Instant pot or Ninja Foodi and pressure cook for several hours.



Vegetable Broth

INGREDIENTS

  • 5 carrots, roughly chopped

  • 2 onions, roughly chopped

  • 2 stalks of celery, roughly chopped

  • 3 cloves of garlic

  • 1 tbsp avocado oil

  • 1 bunch parsley

  • 2 tsp sea salt

  • 1 tsp peppercorns

  • 2 bay leaves

  • 5 quarts of water

INSTRUCTIONS

  1. In a large pot, saute carrots, onions, celery, and garlic until golden brown.

  2. Add remaining ingredients and cover with water.

  3. Bring to a boil, then simmer for 3 hours.
