I rarely eat breakfast, but when it comes to the weekends, I love to make fresh eggs from my parent’s chickens. I recently learned how to make seed crackers and loved these as a base for the eggs.
Brunch Eggs on Seed Crackers
GLUTEN-FREE, INDULGENCE, PALEO, WHOLE 30
INGREDIENTS
1 seeded cracker
1/2 an avocado, smashed
watermelon radish, sliced
1 pastured egg, fried
1 cup sweet potato ribbons, air-fried
2 slices uncured bacon, fried
dill to garnish
scallions to garnish
DIRECTIONS
Spread smashed avocado on seed cracker. Season with sea salt and pepper.
Layer with watermelon radish and fried egg.
Finish plate with bacon, sweet potato and a garnish if scallions and dill.
