I’m absolutely obsessed with this vegan mayo. It’s egg-less and a wonderful substitute for Aioli. Aquafaba, the liquid from a can of chickpeas, can be an amazing thickener and act as a substitute for egg whites. I like to mix in herbs such as cilantro or even some garlic chili paste. I use Aquafaba on everything such as omelets, fish tacos, as a dip or replacement for mayo.
Aquafaba (Vegan Mayo)
GLUTEN-FREE, INDULGENCE, PLANT-BASED, VEGAN
INGREDIENTS
liquid from one can of chickpeas
1 clove garlic
2 tsp lemon juice
pinch of sea salt & white pepper
2 cups avocado oil
DIRECTIONS
Combine all ingredients, except the oil, in a high-speed blender (Vitamix).
While the blender is on high speed, slowly drizzle the oil until the aquafaba thickens into a mayonnaise-like consistency.
