Vegan Caesar

I love a good vegan Caesar dressing. This recipe uses both cashews and Brasil nuts, as each provides a different texture. The Brasil nuts act as the replacement for Parmesan and the soaked cashews provides creaminess without egg or dairy.

Vegan Caesar


  • 3/4 cup cashews, soaked for 4 hours

  • 1 large garlic clove

  • 1 tbsp capers

  • 1 tsp Dijon mustard

  • 1/4 lemon juice

  • 1/3 cup water

  • sea salt & freshly ground black pepper

  • 6 Brazil nuts


  1. Combine all ingredients except Brazil nuts in a high-speed blender until creamy and smooth. Add more water as needed.

  2. Once creamy consistency is achieved, add Brazil nuts and blend for another few seconds.
