I love a good vegan Caesar dressing. This recipe uses both cashews and Brasil nuts, as each provides a different texture. The Brasil nuts act as the replacement for Parmesan and the soaked cashews provides creaminess without egg or dairy.

Vegan Caesar
INGREDIENTS
3/4 cup cashews, soaked for 4 hours
1 large garlic clove
1 tbsp capers
1 tsp Dijon mustard
1/4 lemon juice
1/3 cup water
sea salt & freshly ground black pepper
6 Brazil nuts
DIRECTIONS
Combine all ingredients except Brazil nuts in a high-speed blender until creamy and smooth. Add more water as needed.
Once creamy consistency is achieved, add Brazil nuts and blend for another few seconds.
