1 large eggplant
2 tbsp tahini
1/3 cup cilantro, chopped
1-2 Serrano chilies, finely chopped
1 small shallot, chopped
sea salt to taste
On a gas stove, char the eggplant on high heat until it completely softens and blackens on all sides.
With a fork, mash the charred eggplant and combine with the remaining ingredients.
