These tortillas are very special. I make them in big batches and save them in the freezer for special tacos. I should mention that the measurements may not be perfect. You will need to adjust the cassava flour to get the right consistency to press your tortillas flat in a tortilla press.

Grain-Free Sweet Potato Tortillas
ENTERTAINING, GLUTEN-FREE, PALEO, PLANT-BASED, VEGAN, WHOLE 30
INGREDIENTS
4 cups sweet potatoes, baked
2 cups cassava flour
sea salt to taste
DIRECTIONS
Combine all ingredients in a food processor until the dough forms.
Divide dough into small golf size balls and press between 2 pieces of parchment in a tortilla press.
Heat a cast-iron pan on medium heat and lightly spray with avocado oil. Cook each tortilla until they puff up and turn golden brown.
Serve immediately or freeze between sheets of parchment.
