I learned about this recipe from Pete Evans and Danielle Walker. It cleverly uses zucchini and carrot ribbons as a substitute for pasta. It’s so healthy tasting but the Coconut Aminos adds a real depth of flavor.
Paleo Pad See Ew
GLUTEN-FREE, PALEO, WHOLE 30
1/2 red onion
1 clove garlic, chopped
1 tsp chopped ginger
2 carrots, sliced into ribbons
1 zucchini, sliced into ribbons
8 oz chicken tenders, sliced into 1-inch pieces
1/2 cup red cabbage, shredded
1 cup broccoli florets
2 tbsp Coconut Aminos
juice of 1 lime
cilantro to garnish
Saute onion, garlic, and ginger until onions become translucent.
Add the remaining vegetables and cook until they become tender.
Finish with Coconut Aminos, lime juice, and cilantro.
