Greek Salad

I’m obsessed with a Greek salad. I love mine with lots of fresh vegetables and a splash of red wine vinegar for extra tang. Lately, I've been using vegan feta and I find it just as satisfying.

INGREDIENTS

  • 1 cup cherry tomatoes, halved

  • 2 medium cucumbers, sliced

  • 1/4 red onion, sliced

  • 1/2 cup tri-colored baby peppers, cut into rings

  • 1/3 cup Kalamata olives

  • 1/8 cup red wine vinegar

  • 1/4 cup EVOO

  • 1 tsp oregano

  • fresh dill and mint to garnish

  • feta or vegan feta optional


DIRECTIONS

  • Season all vegetables with salt + pepper.

  • Toss with EVOO, oregano, and vinegar.

  • Crumble with cheese (optional).

  • Garnish with fresh herbs.
