I’m obsessed with a Greek salad. I love mine with lots of fresh vegetables and a splash of red wine vinegar for extra tang. Lately, I've been using vegan feta and I find it just as satisfying.
ENTERTAINING, PALEO, PLANT-BASED, VEGAN, WHOLE 30
1 cup cherry tomatoes, halved
2 medium cucumbers, sliced
1/4 red onion, sliced
1/2 cup tri-colored baby peppers, cut into rings
1/3 cup Kalamata olives
1/8 cup red wine vinegar
1/4 cup EVOO
1 tsp oregano
fresh dill and mint to garnish
feta or vegan feta optional
Season all vegetables with salt + pepper.
Toss with EVOO, oregano, and vinegar.
Crumble with cheese (optional).
Garnish with fresh herbs.
