Beet Gazpacho

What a detoxifying and refreshing cold soup. I was surprised that I actually like this more than the traditional recipe. I like to add apple cider vinegar for an extra zing.

Beet Gazpacho

DETOX, GLUTEN-FREE, PALEO, PLANT-BASED, VEGAN, WHOLE 30


INGREDIENTS

  • 1 cup cucumber, peeled

  • 1 cup steamed beets, cooled

  • 1 clove garlic

  • 1/4 cup red onion, chopped

  • 1/4 cup apple cider vinegar

  • 1/4 cup lemon, juiced

  • 1/2 cup water

  • 1/4 avocado, chopped

  • EVOO drizzle

  • chives to garnish


DIRECTIONS

  1. Combine cucumber, beets, onion, garlic, lemon, water, and blend until smooth.

  2. Garnish with avocado, EVOO, sea salt & chives.
