What a detoxifying and refreshing cold soup. I was surprised that I actually like this more than the traditional recipe. I like to add apple cider vinegar for an extra zing.
Beet Gazpacho
DETOX, GLUTEN-FREE, PALEO, PLANT-BASED, VEGAN, WHOLE 30
INGREDIENTS
1 cup cucumber, peeled
1 cup steamed beets, cooled
1 clove garlic
1/4 cup red onion, chopped
1/4 cup apple cider vinegar
1/4 cup lemon, juiced
1/2 cup water
1/4 avocado, chopped
EVOO drizzle
chives to garnish
DIRECTIONS
Combine cucumber, beets, onion, garlic, lemon, water, and blend until smooth.
Garnish with avocado, EVOO, sea salt & chives.
